I have to be honest: the blog has been giving me some struggles recently. I haven’t posted as often as I’d like because life has been busier than usual with family and friends visiting, but also because I’ve had technical issues with the blog that have resulted in hours and days of working with real pros on fixing the behind-the-scenes stuff that makes this blog run smoothly.
Hopefully, the end of my tech problems is near, and I’ll be able to resume my semi-regular blogging schedule. I recently tried a few of Pasta Evangelists‘ fresh pasta delivery service over a course of a couple of weeks. Like other meal subscription delivery boxes, all you have to do is choose your dishes for any given week, and on the appointed day all of the ingredients for a complete meal arrive at your door.
The difference between Pasta Evangelists’ delivery service besides its focus on fresh, handmade pasta is that fresh pasta cooks up in minutes, instead of having to spend an extra 30-45 minutes prepping and/or cooking. One week, we had a pumpkin lasagna with sage, almonds and parmesan cheese, which arrived already assembled and ready to slide into the oven to cook. The sheets of lasagne were fresh, and the pumpkin was creamy and slightly sweetened. We loved the crunchy almonds too, which I scattered on top after the bubbly lasagne came out of the oven.
On another night, I made Pasta Evangelists’ lamb ragu tagliatelle. The instructions that came with the pasta were incredibly easy. I boiled the pasta for a couple of minutes in salted water while warming the ragu in a small saucepan, then tossed the two together in a big bowl. Along with some steamed green beans (my kids could eat green beans 8 days a week) and a crunchy green salad, I had dinner ready to go in under 20 minutes. The tagliatelle was delicious — eggy and perfectly chewy, and the ragu was hearty and filling.
