Well, today I’m showing you how it’s possible to use that chicken to make three very simple, delicious dinners with just a few additional ingredients. Easy Chicken Recipe #1: BBQ Chicken Sandwiches
Additional ingredients required: 1 cup barbecue sauce, 1 cucumber, thinly sliced, 4-6 crusty ciabatta rolls, 1 sliced avocado (optional)
It doesn’t get much easier than pulled chicken barbecue sandwiches. After you pull your Instant Pot chicken from the pot and shred it using tongs (see here for more details on how to do that), mix the barbecue sauce with the chicken and serve with crunchy sliced cucumbers on top of crusty rolls. Add a side salad or some grilled corn, and you’ve got a big, satisfying meal ready in less than 30 minutes!
Easy Chicken Recipe #2: Mole Chicken Tacos
Additional ingredients required: 1.5 cups Mexican mole sauce, 1 cup crumbled cotija or mild feta cheese, 12 corn tortillas, 1 sliced avocado
Mexican mole is a rich, dark sauce made out of bitter chocolate, sesame seeds, chiles and a host of other spices. It’s complicated and lengthy to make on your own, but there are plenty of tasty, ready-made mole sauces available online or at your local grocery store. If mole sauce isn’t your jam, try tomatillo salsa or a zesty tomato enchilada sauce instead. Mix the shredded chicken with your sauce of choice and top with cotija cheese and avocados and serve with corn tortillas for a riff on a make-your-own taco night.
Easy Chicken Recipe #3: Thai Chicken Coconut Soup
Additional ingredients required; 1 14-ounce can of coconut milk, 3 cups low-sodium chicken broth, 2 limes, 1 bunch of cilantro (coriander).
I love coming home to a Thai chicken coconut soup. It’s a filling meal, especially if you turn it into a noodle soup like this one I love to make. If you’re short on time, make just a basic Thai chicken coconut soup by bringing the broth and coconut milk to a boil in a medium-sized pot. If you’re feeling extra generous, you can add veggies like chopped carrots, edamame or baby corn to simmer for a few minutes. Finish by adding the shredded Instant Pot chicken to the pot to warm through. Top with squirts of lime juice and chopped cilantro, then put your face about two inches from your bowl and inhale deeply.
