I can still remember my dad slicing the pomelo, explaining to us that there’s only one proper way to slice it, by making incisions through the thick rind starting from the navel and moving downwards, then gingerly peeling away the rind so as to keep it in one piece.  My dad then uses the peel for a specific purpose, one I thought was unique to him, until I realized that indeed, everywhere in Asia, pomelo is really sliced the same way, everywhere.
