
I’ve had back-to-back illnesses in the last month. First, I got a cold, which morphed into an ear infection (because I apparently have the immune system of a seven-year-old). Then, just when I was feeling better, I got a chest infection. I’m just a barrel of laughs coughs right now.
As a result, dinner has kind of taken a backseat. The hubby has pitched in when he can (he’s super busy with work right now), and I’m trying not to rely too much on takeout. That’s when my slow cooker has come in handy, because I can handle the food minimally (I’m trying desperately not to spread my plague to the other members of my household). It’s also no-fuss — just throw the food in, put the lid on, and 6-8 hours later — voila!
That’s why I’m sharing this 12 new and different slow cooker recipe roundup I’ve found during my search to make low-maintenance meals. You’ll notice that I’ve included a bunch of curry recipes. We’re total curry addicts over here. Plus, I really love the way the slow cooker melds together the flavors of curry, which always needs hours to build. In addition, I found some helpful slow cooker tips and hacks to make the process go more smoothly. The most helpful tip so far has been to assemble all of my ingredients in the insert the night before, refrigerate, and then just pop the insert into the slow cooker in the morning, thus saving me the hassle of trying to prep my slow cooker AND feed the kids breakfast (that’s just insanity, amiright)?
